Beginning in the early 1970's, Don Pelts began to visualize a Memphis-style BBQ "joint" that made great premium BBQ in a fun 50's environment. After spending over a decade operating an existing Memphis BBQ restaurant (1970-1983 ), he finally set out to realize his dream. In 1984 Don found the perfect location and was ready to bring Corky's to reality. All he could think of was a small cozy place with old barn wood walls, lots of neon, polished brass, interior aged brick, ceiling fans, servers in bow ties and white shirts, and of course piping in all the great music hits of the 50's and 60's. The rest is Memphis history!

Ever wondered where the word Barbecue came from? Well, here is some legend.

THE NAME:

Barbecue, Barbeque, Bar-B-Que, Bar-B-Q, BBQ, Cue and in some areas just Q.

HISTORY:

There are many theories about how the name came about. Here are three that sound most reasonable.

Barbacoais a Spanish term that was used in the West Indies denoting a method of slow roasting over an open pit of coals. Some say that a series of green wood was used to make a framework in which the animal was skewered and held over the fire.

Barbe a queue” is from the French term that means to roast from head to tail. Apparently, the French would use a similar framework of wood and turn the animal over a pit of coals.

“The Bar BQ, some say was a cattle brand used in the early days of cattle ranching. The Bar BQ had parties on their ranch where cattle and hogs were served that had been slow roasted to tender perfection.

Wherever the legend of Barbecue came from, it seems to be consistent that it means that a cow or pig was slow roasted to make it tender. Even though the name is spelled and pronounced differently throughout the United States , the idea of slow roasting holds true today and continues to gain popularity.
